Using Skyscanner
The "Whole Month" feature on the skyscanner website www.skyscanner.net has a feature in the search options to display the costs of flights outbound and inbound for a given month. As you can see from the image on this page, the prices vary wildly with Tuesday being the cheapest day to fly to the US and Friday the cheapest day to fly back.
When entering the airport code for Orlando, do not just use MCO (Orlando International) use ORL as this will include flights to Sanford Orlando Airport. We like Sanford, it is a little further away but much nicer to fly into.
Do not book more than six months in advance. Airlines do not usually actively manage prices more than six months ahead so you will generally only get sales and incentives to use lesser booked services closer to the time.
Be aware of extras! Charter airlines such as Thomson can charge extra for luggage and in-flight drinks, If an integral part of your holiday is quaffing drinks on the plane (as it is ours), this can add up. Sometimes the Virgin Atlantic tickets look expensive but are not always.
Watch out for BA code share flights with American, the American aircraft do not have any in-flight entertainment. When flying with young ones (and even old ones) seat back TVs can make the journey pass much more quickly.
